Vegetable Broth: WFMW

Vegetable broth is both hard to find and overpriced in my area. After being disgusted with the price I decided to take matters into my own hands. The results were phenomenal!

Here’s how you can make a delicious and flavor packed vegetable broth.

After you make your creamy corn or regular corn recipes don’t toss the cobs! Even if you have to stick them in a zippered bag until you have time to get to them later, that’s fine. You can keep them in the back of the fridge or the freezer until you’re ready to use them.

Place 4-6 corn cobs in a large pot and add 8 cups of water.

Slice into an onion to open it up. You don’t need to remove the skin or chop it up. Break a large clove or two of garlic in half, no need to peel those either. Break a clean stalk of celery in half. Add the onion, garlic and celery to the pot with the corn and water.

Bring everything to a light boil over medium heat then reduce the heat to low and let it simmer for half an hour or so.

Add a half a teaspoon of salt and stir.

Carefully drain the broth through a fine wire-mesh strainer and throw away the corn cobs and vegetables. Line the strainer with a coffee filter or paper towel and strain the broth again.

Cover and let cool. You can store this in the fridge for a week or you can freeze it to use later! This is a wonderful broth to use in soups such as vegetable, minestrone and potato.

Oooh, corn cobs, good idea! A good veggie broth is hard to find. I buy some vegetable bouillon cubes that make a wonderful broth, but I get them at a local health food store, and I’ve wondered what I would do if we moved elsewhere. It would be good to get into the habit of making my own.

I use vegetable broth all the time and luckily, it is easy to find. But I wish I had known this as I just went through a dozen ears of corn last week. :(
