Saturday Sides: Sugar Glazed Asparagus

Mmm. Sugar. Need I really say more? Oh o.k., how about butter? There ya go! Butter AND sugar! Now you’re interested.

This recipe is reminiscent of the amazing glazed carrots I love to make (and eat! I love to eat them!!)

These are simple. Delicious. Slightly sweet. Fantastic. MINE.

My kids don’t like asparagus, do yours? I have a feeling I could dip asparagus in chocolate and they would take a pass. However, Hubby and I thought they were awesome and declared “MORE FOR US!”

Sugar Glazed Asparagus

Adapted From Taste of Home
3 Tablespoons butter or margarine
2 Tablespoons brown sugar
2 pounds fresh asparagus, cut into 2 inch pieces
1 cup of chicken broth

Trim the asparagus, snapping off the reedy ends. Hold with both hands – one on each end of the stalk.  Bend the fat end down and let the vegetable snap on it’s own.  This will remove the “reedy” end of the asparagus and leave the softer, yummy part.

Cut the asparagus into two inch sections.

In these photos I halved this recipe since it was just Hubby and I eating. So, if it looks like I don’t have enough in the pictures, that’s why.

Melt the butter over medium heat in a skillet. Add brown sugar and stir until it has dissolved.

Melt the butter.

Add asparagus and saute for 2 minutes.

Stir in chicken broth and bring to a boil.

Cook the asparagus pieces

Reduce heat and cover the pan. Simmer for about 8 minutes.

Remove asparagus with a slotted spoon and turn up the heat. Cook the sauce uncovered until it is reduced by half and slightly thickened. Pour over the asparagus and serve.

Imagine a wonderful picture of a completed dish. Imagine because . . . I totally started eating and forgot to take one. Sorry! Trust me, they looked GREAT!

Great idea, I’ll pass this on to my sister who has veggie hater kids! She does something similar with carrots and a honey glaze. Thanks for sharing!

I like roasted veggies of any kind, but have made glazed carrots. I am going to the store today to try this. My husband may give this a try. He’s my vegetable-hating kid.
