Do you have a favorite sandwich? Just about everyone does. Maybe yours is a reuben or a patty melt. Perhaps you like turkey on wheat with spicey brown mustard? Some folks just like regular ol’ PB&J.
My top three sandwiches:
3. Peanut butter on French Bread with a side of Doritos.
2. Smoked turkey with colby-jack cheese on a dark pumpernickel bagel with dijon mustard, red onion and lettuce. (Wow, I just got hungry!)
And my number one top choice?
1. Grilled Cheese.
I love an ooey-gooey toasted cheese sandwich. Sometimes with pickles, sometimes without. I have loved grilled cheese for as long as I can remember. When I was a little girl I would order these all the time when my Grandparents would take me out to eat on Saturday night.
And now, when I can’t decide what to eat, which actually happens a lot, or when I’m foraging through the cabinets and finding nothing that takes less than 45 minutes to prepare – I almost always can scrounge together a couple of pieces of bread, some margarine and a piece or two of cheese.
My kids prefer American cheese on white bread, but if I’m going to make my own sandwich it needs to be my extra special triple deluxe grilled cheese.
Triple Deluxe Grilled Cheese
To make two sandwiches:
4 slices of Italian bread
2 tablespoons spreadable margarine or soft butter
1 teaspoon Parmesan cheese
2 slices mozzarella cheese
2 slices provolone cheese
Heat sandwich press, indoor grill, or a simple saute pan over medium heat.
Mix Parmesan cheese and margarine together and spread over one side of each slice of bread.

Place bread butter side down on a piece of wax paper, add one slice of mozzarella and one slice of provolone and top with another slice of buttered bread (butter side up). Used to be I didn’t know to use wax paper, and I would have this intricate system of stacking and balancing the bread so that the buttered side wouldn’t land face down if I dropped it. Then, I figured out how well the wax paper thing works. All that wasted bread . . .

Place sandwich in the hot pan and grill until golden brown. Flip sandwich over and grill other side until golden brown and cheese is melted.
Serve immediately.
